Vegetable Hot and Sour Soup Recipe

Ingredients

Saffola Active oil – 1 tsp, 5 ml
Onion – 2 tbsp 35 g
Garlic – 1 tsp 2 g
Ginger – 1 tsp 2 g
Corn kernels – 3 tbsp,40 g
Carrot – 2 tbsp 40 g
Capsicum – 2 tbsp 20 g
Mushroom – 3 tbsp 40 g
Water – 2 cups 400 ml
Saffola Chinese Masala Oats – 40 g
Vinegar – 1 tbsp 5 ml
Red chilli sauce – 1 tbsp 5 ml
Salt to taste
Freshly cracked black pepper – ½ tsp 1 g
Spring onion greens for garnishing

How to make Vegetable Hot and Sour Soup

Heat 1 tsp oil in a pan.
Add onion, ginger and garlic, and sauté for a few seconds.
Add carrot, capsicum, corn and mushroom, and cook on high heat for 2-3 minutes.
Add water, and bring the mixture to a boil.
Blend the Saffola Chinese Masala Oats in a blender to make a smooth powder.
Add the powder in the pan and mix well.
Add vinegar and red chilli sauce.
Season with salt and black pepper.
Boil the soup for 2-3 minutes.
Garnish with spring onion greens.
Serve hot.
